Transform a humble yellow cake mix into a delectable Ugly Duckling Cake, bursting with flavors of canned fruit cocktail, coconut, and nuts. Taste trumps looks every time!
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix
  • 1 (15.25 ounce) can fruit cocktail, undrained
  • 1.5 cups flaked coconut, divided
  • 2 large eggs
  • 0.5 cup packed brown sugar
  • 0.5 cup chopped walnuts
  • 0.5 cup unsalted butter
  • 0.5 cup evaporated milk
Instructions:
  • Preheat your oven to 325°F (165°C) and generously grease a 9x13-inch baking pan.
  • In a large bowl, mix cake mix, undrained fruit cocktail, 1 cup coconut, and eggs with an electric mixer on medium speed for 2 minutes. Pour the batter into the prepared pan and sprinkle evenly with brown sugar and walnuts.
  • Bake in the oven at the temperature you preheated it to, until a toothpick inserted in the middle comes out clean, around 45 minutes.
  • Once the cake is nearing completion, in a saucepan, melt butter with white sugar and evaporated milk until it reaches a boil. Let it simmer for 1 minute, then mix in the remaining 1/2 cup of coconut.
  • Drizzle the warm coconut mixture over the cake.
