Irresistible blueberry pie - quick, easy, and guaranteed to impress!
Ingredients:
  • cooking spray
  • 6 cups frozen blueberries
  • 0.25 cup cornstarch, or as needed
  • 1 cup white sugar
  • 0.25 cup freshly squeezed orange juice
  • 1 orange, zested
  • 1 teaspoon pure vanilla extract
  • 1 pastry for a double-crust 9-inch pie, at room temperature
  • 1 egg white, lightly beaten
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C, gas mark 6) and generously coat a 9-inch pie dish with cooking spray.
  • In a bowl, gently toss blueberries with cornstarch until evenly coated. Add sugar, orange juice, orange zest, vanilla extract, and cinnamon to the blueberries; mix until fully combined.
  • Place one pie crust into the pie dish. Gently coat the bottom with half of the beaten egg white. Pour the blueberry mixture into the crust.
  • Place the second crust on top of the blueberry filling and press the edges of both crusts together to seal. Make 4 1/2-inch slits in the top crust, then brush it with the remaining egg wash. Protect the edges by covering them with foil strips to avoid burning.
  • Bake until the crust is golden brown and the filling is bubbling, for 50 to 60 minutes in the preheated oven.
