Ingredients:
  • 100g rice
  • 500ml milk
  • 40.00 gm caster sugar
  • 1 vanilla bean, split lengthways
  • 1 bunch rhubarb, trimmed, cut into 2cm lengths
  • 40.00 gm caster sugar, extra
Instructions:
  • Boil rice in water for 5 minutes. Drain and add milk, sugar, and vanilla bean. Simmer and stir occasionally for 20 minutes until rice is tender and creamy.
  • In a saucepan, combine rhubarb, additional sugar, and 1 tablespoon of water. Bring to a boil, then simmer over medium-low heat for approximately 10 minutes until the mixture is soft and pulpy.
  • Remove the aromatic vanilla bean from the fragrant rice and delicately swirl through the tangy rhubarb to create a visually stunning effect. Serve the dish warm to fully appreciate the flavors.
