Vanilla Madeira Cake

Classic English sponge cake with citrus glaze or confectioners' sugar topping option.
Ingredients:
  • 0.75 cup butter, softened
  • 0.75 cup white sugar
  • 2.5 teaspoons vanilla extract
  • 1.75 cups all-purpose flour
  • 1.5 teaspoons baking powder
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and prepare a round cake pan by greasing and lining it with parchment paper.
  • In a bowl, whip butter and sugar with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • After mixing the flour and baking powder into the creamed butter, blend until the batter is smooth. Transfer the batter into the cake pan and level the top using the back of a spoon.
  • Bake in the center of the preheated oven for about 1 hour 15 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10 to 15 minutes, then transfer it to a wire rack to cool completely.
