Ingredients:
  • 6 beef cheeks (see note - about 1.2kg), trimmed
  • 40.00 ml plain flour, seasoned
  • 36.40 gm olive oil
  • 1 large onion, chopped
  • 1 carrot, chopped
  • 250ml red wine
  • 500ml beef stock
  • 1 vanilla bean, split
  • 50g brown sugar
  • 2 thyme sprigs
  • 2 bay leaves
  • Mashed potato, to serve
  • Steamed vegetables, to serve
Instructions:
  • Preheat your oven to 180°C. Gently pat the beef dry with a paper towel, then coat it with seasoned flour.
  • In a large flameproof casserole, heat oil. Sear beef in batches over medium heat for 2 minutes per side until golden. Add onion, carrot, and garlic to the same pan and sauté for 1 minute. Pour in wine, stock, vanilla, sugar, and herbs, bringing it to a boil. Return beef to the pan, cover with a circle of baking paper and lid, then cook in the oven for 2 hours. Remove beef, then simmer sauce over high heat for 2-3 minutes until slightly thickened. Season to taste and return beef to the pan. Serve with mashed potatoes and vegetables.
