Vegan mashed potatoes: Boil russet potatoes with thyme, rosemary, and garlic, then mash with olive oil for a creamy and flavorful side dish.
Ingredients:
  • 2 pounds russet potatoes
  • 8 cloves garlic, peeled and smashed
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • 0.25 cup olive oil
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • In a large pot, combine potatoes, garlic, rosemary, and thyme. Cover with salted water and bring to a boil. Cook covered until potatoes are tender when pierced with a knife, approximately 30 minutes. Drain and save 1 cup of the cooking water.
  • In a large bowl, combine the boiled potatoes and garlic, discarding the rosemary and thyme. Add olive oil, salt, and pepper. Mash together using a potato masher, gradually adding cooking water until you reach your desired consistency.
