Irresistibly creamy vegan mashed potatoes with a garlicky kick that everyone will devour. Perfect for any table, loved by all!
Ingredients:
  • 1 head garlic
  • 1/4 cup plus 2 teaspoons extra virgin olive oil, divided
  • 2 pounds russet potatoes, peeled and cut into 2-inch pieces
  • 2/3 cup oat milk or other plant milk, room temperature
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 to 3 tablespoons vegan butter, for serving
  • 1 tablespoon chopped chives, for garnish (optional)
Instructions:
  • Prepare the garlic: Preheat the oven to 400°F. Trim the top off the garlic head, exposing the cloves, and remove extra papery layers, keeping the head intact. Drizzle 2 teaspoons of olive oil over the garlic, then wrap it in aluminum foil.
  • Roast the garlic: Place the wrapped head of garlic on a baking sheet and bake for 40 minutes until the cloves are soft and lightly browned. Allow it to cool for 15 minutes. Squeeze the softened garlic into a bowl, discarding the skin.
  • Cook the potatoes: Once the garlic is nearly roasted, add the potatoes to a large pot and cover them with cold water until they're 1 to 2 inches submerged. Boil over high heat until the potatoes can be easily pierced with a fork, about 15 minutes. Drain in a colander, return them to the pot, and sauté over medium-low heat for 1 to 2 minutes to remove excess moisture. Remove from heat.
  • Mash the potatoes with the roasted garlic using a potato masher, ricer, or fork until they are smooth and fluffy in the pot.
  • Combine the 1/4 cup of olive oil, room temperature milk, salt, and pepper with the potatoes in the pot. Mix well until all ingredients are evenly combined. Serve the mashed potatoes warm, topped with vegan butter and a sprinkle of chopped chives. Store any leftovers in an airtight container in the fridge for up to 3 days.
