Vegetable Beef Soup II

Savory beef and tomato soup with hearty vegetables, infused with aromatic herbs in rich beef broth.
Ingredients:
  • 1.5 pounds ground sirloin
  • 1 cup chopped onion
  • 2 (14.5 ounce) cans stewed tomatoes
  • 5 cups water
  • 1 tablespoon salt
  • 2 cubes beef bouillon cube
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 russet potato, chopped
  • 0.25 teaspoon dried thyme
  • 1 bay leaf
  • 0.25 teaspoon dried basil
Instructions:
  • Brown the sirloin and onion in a large stock pot until caramelized. Drain any excess grease, then add tomatoes, water, salt, beef bouillon, carrots, celery, potatoes, thyme, bay leaf, and basil. Cover and simmer until the vegetables are tender, about 45 minutes.
