Savory vegetable fried rice with nutty brown rice, bell peppers, peas, onions, sesame oil, and soy sauce. A quick and flavorful dish.
Ingredients:
  • 3 cups water
  • 1.5 cups quick-cooking brown rice
  • 2 tablespoons peanut oil
  • 1 small yellow onion, chopped
  • 1 small green bell pepper, chopped
  • 1 teaspoon minced garlic
  • 0.25 teaspoon red pepper flakes
  • 3 green onions, thinly sliced
  • 3 tablespoons soy sauce
  • 1 cup frozen petite peas
  • 2 teaspoons sesame oil
  • 0.25 cup roasted peanuts
Instructions:
  • - Boil water in a saucepan until bubbling. Add rice and stir. Cover, simmer on low heat for 20 minutes until liquid is absorbed. Remove from heat and set aside.
  • In a large skillet or wok over medium heat, warm peanut oil. Stir in onions, bell pepper, garlic, and red pepper flakes. Cook, stirring occasionally, for 3 minutes.
  • Turn up the heat to medium-high and add in the cooked rice, green onions, and soy sauce. Cook and stir for 1 minute.
  • Toss in the peas and cook for an additional minute.
  • Take the mixture off the heat. Add sesame oil and top with peanuts for extra flavor.
