Vegetarian Cottage Cheese Patties

Wholesome cottage cheese and eggs patties with oats, onion soup mix, and thyme, fried and baked in creamy mushroom sauce till golden and bubbly.
Ingredients:
  • 3 eggs
  • 1.5 cups cottage cheese
  • 1.5 cups quick rolled oats
  • 3 tablespoons wheat germ
  • 1 (1 ounce) envelope dry onion soup mix
  • 1 teaspoon dried thyme
  • 2 tablespoons vegetable oil (for frying)
  • 1 (10 ounce) can condensed cream of mushroom soup
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a large bowl, whisk eggs until fluffy. Add cottage cheese, rolled oats, wheat germ, dry onion soup mix, and dried thyme. Shape mixture into 8 patties.
  • Heat oil in a skillet until sizzling. Brown patties on both sides, then transfer to a 9x13-inch baking dish.
  • In a small bowl, combine condensed soup with 1/2 can of water (or milk) to create a creamy sauce. Drizzle sauce over the patties.
  • Bake in a hot oven until soup is bubbly, approximately 20 minutes.
