Veggies and Cheese Mini-Pizzas

Delicious veggie mini pizzas topped with cheese – ready in just 25 minutes!
Ingredients:
  • 2 pita breads (6 inches in diameter)
  • 3 roma (plum) tomatoes, chopped (1 cup)
  • 2 small zucchini, chopped (2 cups)
  • 1 small onion, chopped (1/4 cup)
  • 2 tablespoons sliced ripe olives
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried basil leaves
  • 1/4 cup spaghetti sauce or pizza sauce
  • 3/4 cup shredded mozzarella cheese (3 ounces)
Instructions:
  • Preheat your oven to 425°F. Carefully split each pita bread into two rounds using a knife. Arrange the rounds on an ungreased cookie sheet and bake for around 5 minutes, or until they are crisp.
  • Combine fresh tomatoes, zucchini, onion, olives, and fragrant basil in a medium bowl. Evenly spread spaghetti sauce over pita rounds, then generously top with the flavorful vegetable mixture. Finish by sprinkling a generous amount of cheese over the top before baking.
  • Bake until the cheese is gooey and bubbling. Cut into delicious wedges to enjoy!
