Whip up a quick vegetarian sushi salad in just 10 minutes for a simple and satisfying lunch option.
Ingredients:
  • 85g (1/2 cup) cooked brown rice
  • 1 small carrot, peeled, cut into matchsticks
  • 1/2 Lebanese cucumber, peeled into ribbons
  • 1/4 small avocado, sliced
  • 1 tsp salt-reduced tamari
  • 2.50 gm sushi seasoning
  • 1 soft-boiled egg, peeled, halved
  • 20.00 ml shredded nori, to serve
Instructions:
  • Combine the rice, carrot, cucumber, and avocado in a serving bowl. Drizzle with tamari and sushi seasoning, then top with the egg and sprinkle with shredded nori.
