Velvety broccoli cheese soup, ready in under 30 minutes. A comforting crowd-pleaser.
Ingredients:
  • 2 tablespoons butter or margarine
  • 0.25 cup chopped onion
  • 2 tablespoons flour
  • 2.5 cups milk
  • 0.75 pound VELVEETA®, cut up
  • 1 (10 ounce) package frozen chopped broccoli, thawed, drained
  • 0.125 teaspoon pepper
Instructions:
  • In a large saucepan over medium heat, melt butter until fragrant. Sauté onion until tender for about 5 minutes. Stir in flour and cook until bubbly, about 1 minute, stirring constantly.
  • Pour the milk into the mixture and bring it to a boil. Lower the heat to medium-low and let it simmer for 1 minute.
  • Stir in the Velveeta cheese, broccoli, and pepper. Cook until the cheese is melted and the soup is heated through, stirring occasionally.
