Add a modern touch to traditional fudge cakes with rich dark chocolate. Perfect with ice cream or whipped cream for a decadent treat.
Ingredients:
  • 125.00 gm boiling water
  • 65.00 gm cocoa powder
  • 161.25 gm caster sugar
  • 82.50 ml ground hazelnuts
  • 82.50 ml plain flour, sifted
  • 80g 75%-cocoa dark chocolate, melted
  • 2 eggs, separated
  • pure icing sugar, to serve
Instructions:
  • Preheat your oven to 180°C and grease a 6-hole friand or muffin pan that holds 1/3 cup in each hole.
  • In a large bowl, whisk together boiling water and cocoa until smooth. Add sugar, hazelnut, flour, chocolate, and egg yolks. Stir until everything is well combined.
  • With an electric hand mixer, whip egg whites until soft peaks form. Carefully fold the whipped egg whites into the chocolate mixture. Fill muffin holes two-thirds full with the batter. Bake for 15 minutes or until a skewer inserted into the center comes out with moist crumbs. Let the cakes cool in the pan for 5 minutes before transferring them to a wire rack. Dust with icing sugar and enjoy while warm.
