Warm citrus pudding

Indulge in a zesty winter citrus pudding by Curtis Stone.
Ingredients:
  • Softened butter, to brush
  • 385g caster sugar
  • 1 tsp fresh lemon zest
  • 1 tsp fresh lime zest
  • 1 tsp fresh orange zest
  • 4 Free Range Eggs, separated, room temperature
  • 90g unsalted butter, melted
  • 75g plain flour
  • 4.00 gm baking powder
  • 310ml milk
  • 60ml lemon juice
  • 60ml lime juice
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 180C (160C fan-forced). Grease six 1-cup (250ml) ramekins or a 20cm square baking dish with softened butter, chill for 5 minutes until firm. Sprinkle 2 tablespoons of caster sugar into the ramekins or baking dish, then tap out any excess. Place in a 33cm x 22cm baking dish (if using ramekins, line the larger dish with paper towel and set the ramekins on top to prevent sliding).
  • In a large bowl, combine 1 cup (220g) caster sugar with citrus zests until sugar is moist and fragrant. Whisk in egg yolks until creamy and pale yellow. Mix in butter, flour, and baking powder until smooth. Slowly stir in milk, lemon, and lime juices until smooth.
  • Using an electric stand mixer with a whisk attachment or an electric handheld mixer, beat egg whites until foamy. Gradually add ½ cup (110g) caster sugar, beating on medium-high speed for 4 minutes or until soft peaks form when beaters are lifted.
  • Use a whisk to delicately incorporate half of the meringue into the batter until it slightly loosens. Gently fold in the rest of the meringue until just combined. Distribute the batter evenly (around 1 cup per ramekin) among the prepared ramekins or baking dish (you may have some extra batter if using ramekins). Sprinkle the tops of the batter with the remaining tablespoon of caster sugar.
  • Fill a larger baking dish halfway with boiling water, ensuring it reaches halfway up the sides of the ramekins or smaller square baking dish. Place the dish in the oven and bake the ramekin puddings until golden brown on top, which should take 25-30 minutes. If using the 20cm square baking dish, bake for 30-35 minutes. Remove the puddings from the water bath with care.
  • Sprinkle puddings with a snowfall of powdered sugar and serve promptly.
