Warm tomato pasta salad

Elevate pasta with a vibrant blend of ripe tomatoes and zesty pesto for a delectable warm salad.
Ingredients:
  • 375g spiral pasta
  • 3 garlic cloves, thinly sliced
  • 2 bunches baby asparagus, diagonally halved crossways
  • 200g red Perino™ Sweet Snacking Tomatoes, halved
  • 200g gold Perino™ Sweet Snacking Tomatoes, halved
  • 40g pine nut
  • 40.00 gm basil pesto
  • 125.00 ml small basil leaves
Instructions:
  • Boil pasta in salted water according to package instructions until al dente. Save ¼ cup (60ml) of cooking liquid. Add back pasta and reserved liquid to the pan.
  • Heat oil in a frying pan over medium-high heat. Sauté garlic for 1 minute until aromatic. Add asparagus and cook for 1-2 minutes until tender. Stir in tomatoes and pine nuts, cook for 2 minutes until tomatoes are softened and pine nuts are golden. Season with salt and pepper.
  • Combine the tomato mixture with the cooked pasta, lemon juice, pesto, and fresh basil in the pan. Gently mix everything together, then distribute evenly among serving plates.
