Elegant watercress cream cheese sandwiches - perfect for ladies’ luncheons, party appetizers, or a quick kids’ snack.
Ingredients:
  • 8 ounces cream cheese, softened and cubed
  • 3/4 cup watercress leaves
  • 1 teaspoon lemon zest
  • pinch of salt to taste
  • 8 slices white bread
Instructions:
  • Combine cream cheese, watercress, lemon zest, and salt in a food processor. Pulse until evenly mixed, keeping some chunks of green leaf for added color and texture.
  • Spread the creamy cheese mixture evenly on 4 slices of bread, then sandwich them with the remaining slices to make 4 delicious sandwiches.
  • Trim the crust off the sandwiches and cut each one diagonally into quarters to create 4 triangles. Serve immediately or store covered in the refrigerator.
