Watermelon and blueberry salad

Watermelon, blueberry, and ricotta salad: a perfect blend of sweet and salty that will leave your guests craving more.
Ingredients:
  • 75g caster sugar
  • 1 vanilla bean, split
  • 100g ricotta
  • 20.00 gm caster sugar, extra
  • 2 tsp finely grated lemon rind
  • 21.00 gm lemon juice
  • 1.2kg watermelon, peeled, quartered
  • 125g blueberries
  • 62.50 ml mint leaves
  • 40.00 ml hazelnuts, toasted, chopped
  • Lemon zest, to serve
Instructions:
  • In a small saucepan, mix sugar, vanilla, and 1/3 cup (80ml) water. Stir over medium heat until the sugar dissolves. Bring it to a boil and let it cook for 2 minutes until the syrup slightly thickens. Take it off the heat and let it cool.
  • Mix together the ricotta, additional sugar, lemon zest, and lemon juice in a bowl.
  • Slice the watermelon into 2cm thick wedges. Place watermelon, blueberries, and mint on a big serving platter. Pour vanilla syrup over the fruits. Top with ricotta mixture and finish with a sprinkle of hazelnuts and lemon zest.
