Quick and easy chicken thighs for busy weeknights, ready in under 40 minutes.
Ingredients:
  • 6 (6 ounce) bone-in, skin-on chicken thighs
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup chicken broth
  • 0.25 cup honey
  • 3 tablespoons dry white wine
  • 2 tablespoons chopped garlic
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon all-purpose flour
Instructions:
  • Rub both sides of the chicken thighs generously with a blend of Italian seasoning, salt, and pepper. Mix chicken stock, honey, white wine, minced garlic, and fresh lemon juice in a large measuring cup.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • In a large cast iron skillet over high heat, sear chicken thighs skin-side down until golden brown for about 4 minutes. Flip the thighs and pour broth mixture over them.
  • Transfer the covered skillet into the oven and bake for 10 minutes. Uncover the skillet and continue baking until the thighs are fully cooked and the juices run clear, about 10 more minutes. Ensure the temperature reaches 165 degrees F (74 degrees C) when measured near the bone with an instant-read thermometer.
  • Take the skillet out of the oven and place the chicken onto a cozy plate.
  • Place the skillet on the stove over medium-high heat. Combine flour with the skillet juices using a whisk until fully incorporated. Simmer until the gravy slightly thickens, for 3 to 5 minutes. Drizzle the gravy over the chicken thighs before serving.
