Wheat-free sago plum pudding

Ingredients:
  • Melted butter, for greasing
  • 250ml (1 cup) milk or soy drink
  • 100g (1/2 cup, firmly packed) brown sugar
  • 90g butter, cubed
  • 50g (1/4 cup) sago
  • 20.00 ml rum or brandy
  • 2.20 gm vanilla essence
  • 1.25 gm mixed spice
  • 2.50 gm bicarbonate of soda
  • 20.60 gm milk or soy drink, extra
  • 120g (1 cup, firmly packed) fresh gluten-free breadcrumbs
  • 165g (1 cup) mixed dried fruit
  • 1 egg, lightly whisked
Instructions:
  • Lightly coat a 1.25 litre (5 cup) pudding basin by brushing it with the melted butter.
  • In a medium saucepan, gently heat the milk or soy drink until it almost boils. Take the pan off the heat and stir in the sugar, butter, sago, rum or brandy, vanilla essence, and spice. Mix thoroughly, cover, and let it sit for 10 minutes.
  • Mix bicarbonate of soda and extra milk or soy drink in a cup until the soda dissolves. Stir mixture into the sago mixture until well combined.
  • In a medium bowl, mix together breadcrumbs and dried fruit. Add the sago mixture and egg, stirring well. Transfer the mixture to the greased pudding basin and even out the top.
  • Lay a piece of non-stick baking paper and foil over the basin, making a pleat in the center. Securely tie with unwaxed white string to cover the basin.
  • Place an upturned saucer in a large saucepan, fill with water, and bring to a boil. Add the pudding to the pan, making sure the water comes 2/3 up the side of the basin. Cover, boil on medium-high heat, replenish water as needed, and cook for 2 hours until a skewer comes out clean from the center. Serve and enjoy!
