White chocolate panna cotta

Indulge in our decadent double-chocolate dessert - a chocolate lover's dream.
Ingredients:
  • 600ml pouring cream
  • 250ml (1 cup) milk
  • 1 vanilla bean, split lengthways
  • 55g (1/4 cup) caster sugar
  • 50g white chocolate, coarsely chopped
  • 20.00 gm cold water
  • 9.00 gm gelatine powder
  • 100g dark chocolate, coarsely chopped
  • 185ml (3/4 cup) thickened cream
Instructions:
  • Combine pouring cream, milk, vanilla bean, and sugar in a medium saucepan over medium heat until almost boiling. Remove from heat, add white chocolate, and let it sit for 1 minute. Stir until the chocolate melts and the mixture becomes smooth.
  • In a small heatproof bowl, combine water and gelatine. Set the bowl in a small saucepan filled three-quarters with boiling water to create a water bath. Whisk with a fork until gelatine dissolves. Stir this mixture into the white chocolate. Let it cool slightly, stirring occasionally. Strain into a jug, then divide among six 125ml (1/2-cup) moulds. Set the moulds on a baking tray, cover with plastic wrap, and refrigerate overnight to set.
  • Place the dark chocolate in a heatproof bowl. Heat the cream in a small saucepan until almost boiling. Pour the hot cream over the chocolate and let it sit for 2 minutes. Stir until smooth and glossy.
  • Flip the panna cotta onto plates and drizzle with chocolate sauce before serving.
