Impress loved ones with homemade rocky road treats.
Ingredients:
  • 250g white chocolate, chopped
  • 82.50 ml chopped pistachio kernels, toasted
  • 125.00 ml dried cranberries
  • 100g white marshmallows
Instructions:
  • Prepare an 8cm x 26cm bar pan by greasing it and lining it with baking paper, making sure to leave a 2cm overhang.
  • Put the chocolate in a microwave-safe bowl. Microwave it, uncovered, on high for 1 to 2 minutes, stirring every 30 seconds, until it's melted and smooth.
  • Combine pistachios, cranberries, and marshmallows in a large bowl. Pour in melted chocolate and mix well. Press the mixture into a prepared pan, cover, and refrigerate for 2 hours until firm. Cut into 16 squares before serving.
