Jatz white chocolate rocky road recipe

Try adding salted Jatz biscuits to your festive rocky road for a salty twist on the Christmas classic. A quick and delicious gift idea!
Ingredients:
  • 360g white chocolate, chopped
  • 280g pkt white and pink marshmallows
  • 100g crackers, broken into quarters
  • 75g (1/2 cup) dried cranberries
  • 55g (3/4 cup) shredded coconut
Instructions:
  • Prepare your 18cm x 28cm slice pan by greasing it and lining the base and sides with baking paper, ensuring that the paper overhangs on two long sides.
  • Melt the chocolate in a heatproof bowl over simmering water, making sure the water doesn't touch the bowl. Stir occasionally until smooth, then set aside to cool slightly.
  • In a large bowl, mix together the remaining ingredients. Pour the chocolate over the mixture and stir until everything is coated. Transfer the mixture to the pan, spread it out, and gently press it down with the back of a spoon. Chill in the refrigerator for 30 minutes or until set.
  • Gently lift the rocky road from the pan using parchment paper. Cut into rustic squares, they don't need to be perfectly uniform. Enjoy immediately or store in an airtight container in the fridge.
