Fluffy and delicate pancakes, perfect with maple syrup.
Ingredients:
  • 1 cup whole wheat flour
  • 0.66666668653488 cup all-purpose flour
  • 0.33333334326744 cup wheat germ
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 2 tablespoons brown sugar
  • 5.3333334922791 tablespoons unsalted butter
  • 2.5 cups buttermilk
  • 3 tablespoons unsalted butter
Instructions:
  • Combine whole wheat flour, white flour, wheat germ or oats, baking powder, baking soda, brown sugar, and salt in a food processor or large bowl.
  • Cut the butter into small pieces using a knife, then combine with the flour mixture until it resembles coarse sand.
  • Create a crater in the middle of the flour-butter blend, then pour in the buttermilk and eggs. Mix until everything is well combined.
  • Preheat a frying pan over medium heat and coat it with 1 tablespoon of butter or oil. Spoon the batter onto the pan to make 4-inch pancakes. When bubbles appear on the surface, flip and cook for approximately 2 minutes until golden brown.
