Try this zesty lime wilted spinach, ready in 30 minutes for a quick and tasty side dish.
Ingredients:
  • 2 tablespoons olive or vegetable oil
  • 1 medium onion, chopped (1/2 cup)
  • 1 slice bacon, cut up
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground nutmeg
  • 1 lb spinach leaves
  • 2 tablespoons lime juice
Instructions:
  • In a 4-quart Dutch oven, heat oil over medium heat. Saute onion, bacon, and garlic for 8 to 10 minutes, until bacon is crispy; then lower the heat to low.
  • Season with a pinch of salt, a dash of pepper, and a hint of nutmeg. Gently incorporate the spinach. Mix until just wilted. Finish with a generous drizzle of lime juice.
