Bacon and egg Yorkshire puddings - a quick and delicious twist!
Ingredients:
  • 125.00 ml plain flour
  • 128.75 gm milk
  • 36.80 gm vegetable oil
  • 4 egg, fried, to serve
  • Bacon, fried, to serve
  • 2 cherry tomatoes, halved, roasted, to serve
  • Fresh baby parsley leaves, to serve
Instructions:
  • Preheat the oven to 240C (220C for fan forced).
  • Combine flour, milk, and eggs in a jug and let rest for 15 minutes. Preheat Texas muffin pans with oil in the oven for 5 minutes.
  • Divide the mixture evenly among the hot pans. Bake for 15 minutes until golden and puffed. Serve topped with a fried egg, crispy bacon, half a roasted cherry tomato, and fresh baby parsley leaves.
