Yuca Fries with Spicy Mayo

Crispy and tender yuca fries, perfect as a versatile side, appetizer, or snack. Pair with zesty spicy mayo for a delectable treat.
Ingredients:
  • For the yuca fries
  • 2 pounds fresh yuca (1 to 2 roots) or 1 1/2 pounds frozen yuca pieces
  • Kosher salt, to taste
  • 2 quarts neutral oil (like canola or vegetable oil), as needed for deep frying
  • For the spicy mayo
  • 2 jalapeños, stemmed and roughly chopped
  • 1 clove garlic
  • 1/2 cup mayonnaise
  • 1 teaspoon fresh lime juice
  • 1 teaspoon white vinegar
  • Kosher salt and freshly ground black pepper, to taste
Instructions:
  • Prepare the yuca: Trim off both ends of the yuca and cut it into 4-inch chunks. Make a shallow slit down the side of each piece, then remove the skin and inner peel using a butter knife or your fingers. For any brown spots, cut them out and give the yuca a quick rinse with water.
  • Boil the yuca: Place peeled yuca segments in a pot, cover with salted water, and bring to a simmer for about 20 minutes until tender, pale yellow, and translucent.
  • Prepare the spicy mayo dipping sauce by blending jalapeños, garlic, mayonnaise, lime juice, vinegar, and salt and pepper to taste until smooth in a small blender or food processor while the yuca cooks.
  • After cooking, allow the yuca to drain thoroughly and cool for 3 to 5 minutes. Cut the yuca in half lengthwise, remove the fibrous core, and slice the halves into 1/2 inch thick wedges.
  • For deep frying: Heat 2 to 3 inches of oil in a pot until 375°F. Fry yuca wedges in batches until golden for about 4 minutes, making sure to crisp all sides. Transfer to a rack or paper towel-lined plate and season with salt. For air frying: Toss yuca wedges with 2 tablespoons of oil and salt. Air fry in a single layer at 400°F until golden and crisp, about 15 minutes, flipping halfway through if needed.
  • Serve the hot yuca fries with spicy mayo. Refrigerate any leftovers in an airtight container for up to 5 days. Reheat in an oven or air fryer at 375°F until crispy. Show some love by rating and commenting below!
