Light and zesty egg salad with crunchy celery and green onion in a tangy dressing of reduced-fat mayo, mustard, and horseradish.
Ingredients:
  • 3 hard-boiled eggs, peeled
  • 1 stalk celery, chopped
  • 1 green onion, chopped
  • 3 tablespoons reduced-fat mayonnaise
  • 1 tablespoon Dijon mustard, or more to taste
  • 1 tablespoon yellow mustard
  • 0.5 teaspoon prepared horseradish, or to taste
  • 0.5 teaspoon paprika
Instructions:
  • In a salad bowl, mash hard-boiled eggs with a fork. Add celery and green onion to the mashed eggs. Mix in reduced-fat mayonnaise, Dijon mustard, yellow mustard, and horseradish until well combined. Adjust Dijon mustard and horseradish to taste. Stir in paprika and chill the egg salad in the refrigerator.
