Delicious vegetable dish with market-fresh produce, perfect for dipping bread.
Ingredients:
  • 8 small zucchini, cut into 1/4 inch rounds
  • 1 onion, sliced
  • 6 tomatoes, sliced
  • 0.5 pound thinly sliced pepperoni
  • 1 (16 ounce) package small curd cottage cheese
  • 0.25 pound shredded Cheddar cheese
  • 0.25 pound shredded mozzarella cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give a light grease to your 9x13 inch baking dish.
  • First, lay down half of the zucchini slices to create a flavorful base. Then, add a delicious layer of half of the onion rings, tomato slices, and pepperoni slices. Top it off with half of the creamy cottage cheese, sharp Cheddar cheese, and gooey mozzarella cheese. Repeat the layers to build a mouthwatering dish.
  • Bake until zucchini is tender and cheese is melted, about 30-40 minutes in a preheated oven.
