Air-fried crispy chicken bites with cornflake coating.
Ingredients:
  • 0.5 pound skinless, boneless chicken breast
  • 0.5 cup all-purpose flour
  • 1 teaspoon adobo seasoning
  • 0.5 teaspoon granulated garlic
  • 2 cups corn flakes cereal
  • 1 teaspoon taco seasoning mix
  • 1 serving cooking spray
Instructions:
  • Prepare the chicken breast by removing any excess fat and cutting it into small, bite-sized pieces.
  • In a resealable plastic bag, mix flour, adobo seasoning, and garlic. Shake thoroughly. Add chicken, coat well, then refrigerate for 8 hours to overnight.
  • Preheat the air fryer to 400°F (200°C) for 5 minutes until it's nice and hot.
  • Pulse cornflakes in a food processor until finely ground like flour, about 20 seconds. Measure out 1/2 cup. Mix the cornflake 'flour' with taco seasoning. Place in a resealable plastic bag with seasoned chicken and shake to coat. Transfer the chicken pieces to the air fryer basket and lightly coat with cooking spray.
  • After air frying the chicken for 5 minutes, gently shake the basket, then generously spray the chicken with cooking spray before air frying for an additional 5 minutes. Serve immediately for optimal enjoyment.
