Guilt-free lemon-glazed donut holes made in an air fryer.
Ingredients:
  • 1.25 cups all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • 0.25 cup whole milk, or more as needed
  • 1.5 teaspoons vanilla extract
  • cooking spray
  • 5 tablespoons confectioners' sugar
  • 1 tablespoon fresh lemon juice
Instructions:
  • In a bowl, mix together flour, sugar, baking powder, and salt. Add butter and use a fork or pastry cutter to blend it into the flour until it looks like coarse cornmeal.
  • Combine milk and vanilla until evenly distributed. If dough is not coming together, add additional milk, 1 tablespoon at a time. Knead dough for 1 to 2 minutes.
  • Preheat your air fryer to 320 degrees F (160 degrees C) and lightly coat the basket with cooking spray.
  • Separate the dough into 12 equal pieces. Place 6 pieces in the basket ensuring they are not touching. Gently spray with cooking spray.
  • Air fry the donut holes for 5 minutes, giving them a light spray, then fry for another 2 minutes. Transfer the cooked donut holes to a wire rack and repeat the process with the remaining 6 portions.
  • Mix confectioners' sugar and lemon juice in a tiny bowl until fully combined. Drizzle the lemon glaze over the donut holes and enjoy while warm.
