Crispy air fryer frittata with vegan breakfast links and veggies - easy and delicious morning meal!
Ingredients:
  • 2 teaspoons olive oil, plus more for brushing
  • 6 ounces Pure Farmland® Savory Original, Plant-Based Breakfast Links (7 links, 1/2 package)
  • 0.25 cup chopped red bell pepper
  • 0.25 cup finely chopped yellow onion
  • 5 large eggs
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup chopped fresh kale leaves, stems removed
  • 1 ounce goat cheese, crumbled into 1/2-inch pieces
Instructions:
  • In a 10-inch nonstick skillet over medium heat, add 2 teaspoons of olive oil. Place the breakfast links in a single layer and cook for 2 minutes on each side until they are lightly golden, about 4 minutes in total. Remove the skillet from the heat and transfer the links to a plate lined with paper towels.
  • After heating the skillet over medium heat, add the peppers and onions. Sauté for about 3 minutes until they are slightly softened. Transfer the mixture to the plate with the sausage to cool slightly.
  • Prepare the cake pan by generously brushing the bottom and sides with olive oil. Line the bottom with a parchment paper circle slightly larger than the pan and press it gently to fit. Brush the parchment and sides with olive oil again.
  • Combine eggs, salt, pepper, kale, and reserved pepper and onion mixture in a bowl. Transfer to a cake pan and sprinkle breakfast links on top. Add dollops of goat cheese evenly over the mixture.
  • Place the pan into a spacious 7-quart air fryer. Cook at 330°F (165°C) for 8 to 10 minutes until the center is just set. Rest for 5 minutes, then carefully lift the pan out using a small spatula. Remove parchment and transfer to a serving plate.
