Whip up a quick and customizable frittata in the air fryer in under 20 minutes with your favorite leftovers.
Ingredients:
  • cooking spray
  • 2 teaspoons butter
  • 0.33333334326744 cup diced bell pepper
  • 0.33333334326744 cup chopped onion
  • 0.5 cup breakfast sausage crumbles
  • 0.5 cup shredded Colby Jack cheese
  • 6 eggs
  • salt and ground black pepper to taste
  • 0.5 teaspoon hot pepper sauce
  • 0.25 cup salsa, or more to taste
Instructions:
  • Preheat a 5.8-quart or larger air fryer to 350 degrees F (175 degrees C) as per the manufacturer's guidelines.
  • Coat a 6-inch round, 4-inch high metal container, designed as an inner pot, with cooking spray.
  • Enhance flavor by adding butter to the inner pot of the air fryer and melting it for 45 seconds. Toss in bell pepper and onion, and sauté for 2 minutes.
  • Remove the inner pot gently and fold in the sausage crumbles. Top with a generous sprinkle of Colby Jack cheese, then prepare to set it aside.
  • Combine eggs in a bowl, ensuring yolks and whites are well mixed. Season with salt, pepper, and hot sauce. Pour seasoned eggs over remaining ingredients and gently combine in the inner pot.
  • Place the inner pot back in the air fryer basket and air fry until the frittata is lightly browned and a toothpick inserted in the center comes out clean, approximately 12 minutes. If needed, continue air frying in 30-second increments until the frittata is fully set. Serve warm or at room temperature with salsa.
