Try this crispy air fryer fried chicken recipe with gluten-free cracker crumbs for a delicious Midwestern twist.
Ingredients:
  • 6 large eggs
  • salt and freshly ground black pepper to taste
  • 1.25 cups gluten-free flour
  • 1.25 cups Gluten free crackers
  • 2 pounds boneless, skinless chicken breast, cut in 1-inch pieces
  • 0.25 cup vegetable oil
Instructions:
  • In a shallow bowl, whisk eggs and season with salt and pepper. Place flour in one bowl and cracker crumbs in another bowl.
  • Coat chicken with flour, dip in eggs, then coat with cracker crumbs. Arrange on air fryer rack, ensuring no overlap. Brush chicken tops with oil.
  • Cook the chicken in the air fryer at 375 degrees F (190 degrees C) until golden brown and crispy, approximately 10 minutes.
