Make crispy Parmesan chicken bites in the air fryer for a delicious, quick snack or appetizer.
Ingredients:
  • nonstick cooking spray
  • 1 (6 ounce) boneless skinless chicken breasts, cut into bite-size pieces
  • 1 large egg
  • 2 tablespoons heavy whipping cream
  • 0.25 teaspoon salt, divided
  • 0.5 cup panko bread crumbs
  • 0.25 teaspoon cantanzaro herbs (such as Savory Spice Shop®) or Italian seasoning
  • 2 tablespoons shredded Parmesan cheese
Instructions:
  • Preheat the air fryer to 400°F (200°C) for 5 minutes.
  • In a bowl, mix together the egg, whipping cream, and half of the salt until it becomes a creamy and frothy yellow mixture.
  • Combine panko, herbs, and the rest of the salt in a separate shallow bowl, mixing until fully blended.
  • First, coat chicken pieces in the luscious egg mixture, then generously coat them with crispy panko before placing them in the air fryer basket.
  • Air-fry the chicken for 13 minutes, shaking the basket every 5 minutes. Sprinkle with Parmesan cheese and cook for an additional 2 minutes until the chicken is no longer pink in the center, the Parmesan is melted, and the juices run clear. Ensure the chicken reaches an internal temperature of at least 165°F (74°C) using an instant-read thermometer.
