Air fryer crispy potato salad with tangy sour cream, chive, and mayo dressing - the ultimate summer BBQ side dish.
Ingredients:
  • 36.40 gm olive oil
  • 185g (¾ cup) whole egg mayonnaise
  • 40g pkt French onion soup mix
  • 1kg baby coliban (chat) potatoes, halved
  • 4 streaky bacon rashers
  • 125g (½ cup) sour cream
  • 21.00 gm fresh lemon juice
  • ½ bunch chopped fresh chives
Instructions:
  • In a bowl, mix together the oil, 60g (¼ cup) mayonnaise, and soup mix. Add the potato and toss to coat evenly. Transfer the potatoes to the air fryer basket and cook at 200C for 15 minutes. Afterward, shake the basket to ensure even cooking, then lay the bacon on top of the potatoes. Continue air frying at 160C for an additional 10 minutes.
  • In a jug, mix the remaining mayonnaise, sour cream, lemon juice, and chives. Season with pepper. Transfer the potatoes to a serving bowl and pour the sour cream mixture over them. Coarsely chop the bacon and sprinkle over the potatoes before serving.
