Air fryer salt and vinegar potato gems recipe

Crispy salt and vinegar potato bites cooked to perfection in the air fryer, a crowd-pleasing finger food for guests or a tasty snack for kids.
Ingredients:
  • 1kg washed desiree potatoes
  • 20.00 ml malt vinegar, plus extra, to serve
  • 62.50 ml grated parmesan
  • 40.00 ml plain flour
  • 1.20 gm sea salt, plus extra, to serve
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • Tomato sauce, to serve
Instructions:
  • Boil potatoes for 10 minutes, drain, and let cool. Peel and grate into a bowl. Drizzle with vinegar, tossing occasionally until cool.
  • Mix the parmesan, flour, salt, onion powder, and garlic powder together, then coat the potatoes with this mixture. Shape 1 tablespoon of the mixture into a tube and place it on a tray. Repeat with the rest of the mixture. Chill in the fridge for 30 minutes.
  • Arrange half of the gems in the air fryer basket and lightly coat with oil. Air fry at 200C for 15 minutes. Repeat with the remaining gems.
  • Place the gems on a platter and generously sprinkle with additional salt and vinegar. Serve alongside a side of tomato sauce.
