Make easy and delicious air fryer spaghetti squash tots by microwaving squash for easier prep.
Ingredients:
  • 1 (3 pound) spaghetti squash
  • 1 teaspoon olive oil
  • 0.25 teaspoon sea salt
  • 0.125 teaspoon ground black pepper
  • 0.5 cup panko bread crumbs
  • nonstick cooking spray
Instructions:
  • 1. With a sharp knife, score a dotted line lengthwise around the squash. Microwave the whole squash on high for 5 minutes. 2. Remove from the microwave and cut the squash in half along the dotted line. Wrap one half in plastic wrap and refrigerate for later use.
  • Remove pulp and seeds from the other half and discard. Brush all the flesh with olive oil and sprinkle with salt and pepper.
  • Preheat the air fryer to 360 degrees F (180 degrees C) for perfectly crispy results.
  • Place the spaghetti squash halves cut side down in the air fryer and cook for 20 minutes.
  • Transfer the mixture to a cutting board and use a fork to fluff it to resemble noodles. Finely chop the noodles and place them in a bowl. Add bread crumbs and Parmesan cheese, mixing well before shaping the mixture into tots.
  • Preheat the air fryer to 400 degrees F (200 degrees C).
  • Arrange tots in the air fryer basket in a single layer and generously coat the tops with nonstick cooking spray. Air fry for 5 minutes, then shake and continue cooking until they reach your preferred level of crispiness, around 5 more minutes.
