Air-fryer root veg

Ingredients:
  • 640 g root veg such as carrot, butternut squash, parsnip, swede
  • olive oil
  • 4 cloves of garlic
  • 2 sprigs of fresh rosemary
  • red wine vinegar
Instructions:
  • Roughly chop the root veg into 2cm chunks (no need to peel). Toss in a large bowl with 1 tablespoon of olive oil, a pinch of sea salt, and black pepper until coated. Cook in the air fryer at 170°C for 25 minutes, flipping/shaking every 10 minutes. Slice the garlic, chop the rosemary, and add them with a splash of red wine vinegar to the veg. Toss together and cook at 190°C for an additional 10 minutes until golden and cooked through.
