Air-fryer salmon with crispy potatoes

Ingredients:
  • 400 g new potatoes
  • olive oil
  • 1 bunch of fresh thyme (20g)
  • 2 x 150g salmon fillets skin on, scaled, pin-boned, from sustainable sources
  • 200 g asparagus
  • 1 lemon
Instructions:
  • Slice the potatoes thinly and transfer to a large bowl. Toss with ½ tablespoon of olive oil, a pinch of sea salt, and black pepper. Place potato slices in air fryer in a single layer. Cook at 180°C for 15 minutes. Add thyme, toss, and continue cooking for 10 more minutes. In the same bowl used for potatoes, place salmon fillets, drizzle with ½ tablespoon of oil, and season with salt and pepper. Cut asparagus into bite-sized pieces and coat with oil. When potatoes are ready, place salmon on top, lay lemon rounds on fillets, and asparagus around. Cook at 190°C for 10 minutes or until golden. Serve the salmon on plates, along with crispy potatoes and asparagus. Enjoy with a side of green salad and pesto.
