Crispy homemade air fryer tempura veggies: perfect for snacking or as an appetizer, dunk in your favorite sauce!
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon salt, divided, or more to taste
  • 0.5 teaspoon ground black pepper
  • 2 eggs
  • 2 tablespoons water
  • 1 cup panko bread crumbs
  • 2 teaspoons vegetable oil
  • 0.5 cup whole green beans
  • 0.5 cup whole asparagus spears
  • 0.5 cup red onion rings
  • 0.5 cup sweet pepper rings
  • 0.5 cup avocado wedges
  • 0.5 cup zucchini slices
Instructions:
  • Preheat the air fryer and oven to 400 degrees F (200 degrees C) and 200 degrees F (95 degrees C) respectively.
  • In a shallow dish, mix flour with 1/4 teaspoon of salt and pepper. In another dish, whisk together eggs and water. In a third dish, stir panko with oil.
  • Season green beans, asparagus, red onion, sweet pepper, avocado, and zucchini with the remaining 1/4 teaspoon salt. Dip the vegetables in flour, then in egg, and finally in panko to coat evenly.
  • Layer half of the vegetables in the air fryer basket, ensuring they are in a single layer. Air fry until golden brown, approximately 8 to 10 minutes. Add extra salt to taste. Keep cooked vegetables warm in the oven. Repeat with the rest of the vegetables.
