Almond Flour Pancakes

Fluffy, nutty pancakes with a light, airy texture.
Ingredients:
  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 cup almond flour
  • 1 tablespoon sugar
  • 2 cups low-fat plain yogurt
  • 2 eggs, lightly beaten
  • 1 tablespoon unsalted butter, melted and cooled
Instructions:
  • Heat a non-stick griddle over medium heat. Use a touch of butter to grease the surface.
  • Sift together the flour, baking powder, baking soda, and salt in a bowl. Combine almond flour and sugar into the mixture. In another bowl, mix yogurt, eggs, and butter. Add the wet mixture to the dry ingredients, stirring gently until just combined. The batter should be thick and airy.
  • Ladle 1/3 cup of batter onto the hot cooking surface, allowing room for the pancakes to spread. Cook until the edges are dry and bubbles dot the surface, for 2 to 3 minutes. Flip and cook until the middle is set and both sides are golden brown, for 1 to 2 more minutes.
