Angel Hair with Tomato and Basil

Basil and tomato pasta dressed to impress, just like dining out.
Ingredients:
  • 3 tablespoons extra-virgin olive oil
  • 1/2 cup finely chopped onion
  • 1/4 teaspoon crushed red pepper flakes
  • 1 can (14.5 oz) Muir Glen™ organic plain or fire roasted diced tomatoes, undrained
  • 1 clove garlic, finely chopped
  • 1/4 teaspoon coarse salt (kosher or sea salt)
  • 8 oz uncooked angel hair (capellini) pasta
  • 1/4 cup chopped fresh basil leaves
  • 1/2 cup shredded Parmesan cheese
Instructions:
  • In a large skillet, warm 2 tablespoons of oil over medium heat. Cook onion and red pepper flakes for 5 minutes until onion is tender. Stir in tomatoes, garlic, and salt. Bring to a boil, then simmer uncovered for 3 minutes, stirring occasionally.
  • While the pasta is cooking according to package instructions, drain it and put it in a serving bowl. Pour the tomato mixture over the pasta and gently toss to coat. Add basil, cheese, and the remaining tablespoon of oil, then toss everything together.
