Deliciously gingery ANZAC coconut cookies, perfect for snacking or breakfast on the run.
Ingredients:
  • 1 cup quick cooking oats
  • 1 cup all-purpose flour
  • 1 cup dry unsweetened shredded coconut
  • 1 cup brown sugar
  • 2 teaspoons ground ginger
  • 1.5 teaspoons baking soda
  • 2 tablespoons boiling water
  • 0.5 cup butter
  • 1 tablespoon golden syrup
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease 2 baking sheets. Combine quick oats, flour, coconut, brown sugar, and ginger in a bowl. Use your fingers to create a well in the center of the dry ingredients.
  • Combine boiling water and baking soda until dissolved. Melt butter in a saucepan, then mix in golden syrup. Add the dissolved baking soda mixture to the dry ingredients well. Gently stir until just combined. Spoon mixture onto baking sheets about 2 inches apart in rounded tablespoons.
  • Bake in the oven until the cookies turn golden brown, for about 10 to 15 minutes.
