"Delicious rustic apple cider syrup, perfect for pancakes and desserts."
Ingredients:
  • 2 tablespoons unsalted butter
  • 1 cup white sugar
  • 1 tablespoon blackstrap molasses
  • 2 cups apple cider
  • 0.25 cinnamon stick
  • 1 tablespoon apple cider
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
Instructions:
  • In a saucepan over medium heat, melt butter until it starts to bubble, around 1 minute. Stir in sugar and molasses until sugar is fully incorporated, about 3 minutes. Add 2 cups apple cider, mix thoroughly, and bring to a gentle boil. Drop in a cinnamon stick and let the syrup simmer for about 10 minutes.
  • Combine 1 tablespoon apple cider, lemon juice, and cornstarch in a small bowl and whisk until smooth.
  • Whisk cornstarch mixture into syrup in a saucepan until fully combined. Simmer for about 5 minutes until thickened to a warm maple syrup consistency. Syrup will thicken as it cools.
  • Enjoy while warm, and for any remaining portions, simply store in an airtight container in the refrigerator for up to 3 weeks.
