Elevated apple pie with cinnamon chips baked into a delicious streusel topping for maximum flavor.
Ingredients:
  • 1 (9 inch) unbaked pie crust
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 5 cups Granny Smith apples - peeled, cored and sliced
  • 1 cup cinnamon chips (such as Hershey's®)
  • 3 tablespoons butter
  • 0.75 cup all-purpose flour
  • 0.75 cup brown sugar
  • 6 tablespoons butter
  • 0.66666668653488 cup cinnamon chips
  • 2 eggs
  • 1 cup half-and-half cream
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat oven to a toasty 400°F (200°C).
  • Combine 1/2 cup white sugar, 1/2 cup brown sugar, 2 tablespoons flour, and cinnamon in a large bowl. Toss in sliced apples until evenly coated. Add 1 cup cinnamon chips. Transfer the filling into a pie crust and top with 3 tablespoons of butter.
  • For the streusel topping, combine 3/4 cup flour and 3/4 cup brown sugar in a bowl. Add 6 tablespoons of butter and mix until it looks like coarse crumbs. Gently stir in 2/3 cup cinnamon chips. Sprinkle over the apple filling.
  • Start by baking in a preheated oven for 10 minutes, then lower the heat to 350°F (175°C) and bake until the filling is bubbling and the streusel is golden brown, about 35-40 minutes. Let it cool for at least 1 hour before serving.
  • While the pie is cooling, make the vanilla sauce. In a double boiler over medium heat, whisk together eggs, half-and-half, and 1/2 cup sugar until thickened. Remove from heat and stir in vanilla. Serve warm or chilled over pie slices.
