Elevate hash browns with the delicious addition of sweet apples.
Ingredients:
  • 200g trussed cherry tomatoes
  • 18.20 gm olive oil, plus 18.20 gm olive oil to fry
  • 400g red apples, unpeeled, grated
  • 400g sebago potatoes, peeled, grated
  • 2 eggs
  • Salt and pepper, to season
  • 20g unsalted butter
  • 1 bunch English spinach, washed, trimmed
  • 8 slices of prosciutto
Instructions:
  • Preheat the oven to 200°C. Spread cherry tomatoes on a baking tray, then generously drizzle with olive oil before roasting for 25 minutes. Mix together red apples, sebago potatoes, and eggs, and season with salt and pepper.
  • In a pan over medium heat, heat 2 tablespoons of olive oil and 20g of unsalted butter. Spoon 1/4 cup of the mixture into the pan, spread slightly to form a 10cm disc, and cook 2-3 at a time for 2-3 minutes each side until golden. Keep warm in the oven on a baking tray.
  • Cook English spinach in a frying pan for 1-2 minutes until wilted. Top hash browns with wilted spinach, tomatoes, and 2 slices of crispy grilled prosciutto per serving.
