Savor the savory flavors of Asian steak stir-fry with lean beef for a quick and healthy weeknight meal!
Ingredients:
  • 1 pound beef top sirloin steak boneless, cut 1 inch thick
  • 4 cups assorted fresh vegetables, such as sugar snap peas, broccoli florets, bell pepper and carrot strips
  • 0.5 cup prepared stir-fry sauce
  • 0.125 teaspoon crushed red pepper, or to taste
  • 2 cups hot cooked rice
  • 2 tablespoons unsalted dry-roasted peanuts
Instructions:
  • Slice the beef steak into thin strips, about 1/4-inch thick, first cutting lengthwise and then crosswise.
  • In a large nonstick skillet, toss vegetables with 3 tablespoons water. Cover and cook over medium-high heat until vegetables are crisp-tender, about 4 minutes. Drain excess water.
  • Heat a pan over medium-high heat until hot. Cook half of the beef and half of the garlic until the beef is no longer pink on the outside, which takes 1 to 2 minutes. Remove the cooked beef and garlic from the pan and repeat the process with the remaining beef and garlic.
  • Place the beef and vegetables back into the pan along with the stir-fry sauce and crushed red pepper. Heat everything through and then serve over hot rice. To top it off, sprinkle with peanuts for extra crunch, if desired.
