15-minute beef mince noodles topped with a delicious sunny-side up fried egg.
Ingredients:
  • 500g beef mince
  • 36.80 gm vegetable oil
  • 135.00 gm hoisin sauce
  • 260g Asian style coleslaw mix
  • Noodles of choice, prepared following packet instructions
  • 1 long red chilli, thinly sliced
  • Green onions, thinly sliced, to serve
  • Steamed Asian greens, to serve
Instructions:
  • Heat 1 tablespoon of oil in a frying pan or wok over medium-high heat. Cook the mince for 5 minutes, using the back of a wooden spoon to break it up until browned.
  • Drizzle in the rich hoisin sauce and mix thoroughly. Toss in the coleslaw mix and 1 tablespoon of water, ensuring everything is well coated. Cook for 1 minute until veggies are just tender.
  • Heat the remaining oil in a large frying pan. Cook the eggs for 2-3 minutes until the whites are fully cooked. Spoon the mince mixture over the noodles, top with an egg, sprinkle with chili and green onions, and serve with steamed Asian greens.
