Asian greens and shiitake mushrooms

Asian-inspired stir-fried greens with shiitake mushrooms - bursting with authentic flavors.
Ingredients:
  • 36.40 gm peanut oil
  • 2 garlic cloves, crushed
  • 2 tsp finely grated fresh ginger
  • 100g fresh shiitake mushrooms, thinly sliced
  • 1 bunch baby pak choy, trimmed, leaves separated, stems cut from leaves
  • 1 bunch baby bok choy, trimmed
  • 1 x 425g can baby corn spears, drained
  • 48.80 gm oyster sauce
  • 21.00 gm soy sauce
  • 40.00 gm water
Instructions:
  • In a large frying pan or wok, heat oil over medium-high heat. Add garlic and ginger and stir-fry for 30 seconds until fragrant.
  • Sauté the mushrooms for 2 minutes until golden. Toss in the pak choy stems and cook for 1 minute. Finally, add the pak choy leaves, baby bok choy, corn, oyster sauce, and soy sauce. Mix everything together thoroughly.
  • Pour in the water, lower the heat, cover, and simmer for 2 minutes until the veggies are tender. Serve hot.
